Ingredients

⅓ cupwhite sugar
2 teaspoonvanilla extract
or essence
1 ½ cupmilk
at room temperature
¼ cupunsalted butter
melted but chilled
1egg
large, at room temperature
2 cupsall purpose flour
or plain
2 teaspoonbaking powder
salt
oil spray
fruit

Instructions
Step 1
In a medium bowl, add sugar and wet ingredients. Whisk until incorporated. In a separate large bowl, sift in the remaining ingredients and whisk. Make a well in the dry ingredients.
Step 2
Pour the wet ingredients into the dry ingredients and whisk until combined (lumps are okay).
Step 3
Cover the bowl with cling wrap and chill in the fridge for 20 minutes.
Step 4
Spray pan with oil spray and scoop 1/2 cup batter and cook for 3 minutes on each side or until golden brown. Repeat with the remaining batter.
Step 5
Add toppings of your choice.
Step 6
