Step 1
Combine water and chopped dates in a small bowl and microwave for 30 seconds (or heat in a small pot until just starting to simmer). Whisk for one minute then whisk in cashew butter until thoroughly dispersed. Stir in lemon juice and chia seeds and let sit for 15 minutes to thicken.
Step 2
Note: For a change of pace, replace the cashew butter and lemon juice with almond butter and balsamic vinegar.
