Sweet Potato Mochi:⁠ 1 medium sweet potato(about 14.5oz), peeled and chopped⁠ 1½ tablespoon potato starch⁠ 1 tablespoon soy milk(or plant-based milk)⁠ A pinch of sea salt⁠ Dash of black pepper⁠ ¼ cup +2 tablespoon of vegan mozzarella shreds⁠(I used ) 2 tablespoons of toasted sesame oil⁠ ½ teaspoon of black sesame seeds⁠ ⁠ Sweet Soy Sauce:⁠ 1 tablespoon Soy sauce⁠ 1 tablespoon Coconut sugar⁠ 1 tablespoon Mirin⁠ 1 tablespoon water⁠ ⁠ Microwave sweet potato for 5 to 6 min until fork tender. Use the back of the fork to mash sweet potato and mix with potato starch, soy milk, salt, and pepper. Divide into 4 portions. Flatten a portion on parchment paper. Place vegan cheese on the center and wrap up. Shape into a patty. Heat sesame oil in a pan and sear patties on both sides until crispy. Remove them from the pan and add the ingredients of the sauce into the pan. Cook until thickens. Drizzle the sauce and sprinkle sesame seeds.
