Melty Cheesy Sweet potato Mochi š§ by

Soft Sweet potato Mochi with a lightly crisped outside oozing with melted to perfection vegan cheese in the middle! š

Sweet Potato Mochi:ā
1 medium sweet potato(about 14.5oz), peeled and choppedā
1Ā½ tablespoon potato starchā
1 tablespoon soy milk(or plant-based milk)ā
A pinch of sea saltā
Dash of black pepperā
Ā¼ cup +2 tablespoon of vegan mozzarella shredsā (I used
)
2 tablespoons of toasted sesame oilā
Ā½ teaspoon of black sesame seedsā
ā
Sweet Soy Sauce:ā
1 tablespoon Soy sauceā
1 tablespoon Coconut sugarā
1 tablespoon Mirinā
1 tablespoon waterā
ā
Microwave sweet potato for 5 to 6 min until fork tender. Use the back of the fork to mash sweet potato and mix with potato starch, soy milk, salt, and pepper. Divide into 4 portions. Flatten a portion on parchment paper. Place vegan cheese on the center and wrap up. Shape into a patty. Heat sesame oil in a pan and sear patties on both sides until crispy. Remove them from the pan and add the ingredients of the sauce into the pan. Cook until thickens. Drizzle the sauce and sprinkle sesame seeds. Enjoy!ā
