Step 1
In a medium bowl, combine ¼ cup of the olive oil, the lemon juice, vinegar, oregano, garlic, ½ teaspoon of the salt, and ½ teaspoon of the pepper and stir until combined thoroughly.
Step 2
Put the lamb chops in a shallow container good for marinating and thoroughly season them with the remaining 1 teaspoon salt and ½ teaspoon pepper. Pour the marinade over the lamb and cover. Refrigerate for 30 minutes, or overnight if you have the time.
Step 3
In a large cast-iron pan, heat the remaining 2 tablespoons oil over medium-high heat. Add the lamb chops and cook until seared and cooked to medium-rare or medium doneness, 2 to 3 minutes per side.
