Rojak or rojak mamak in Malaysia and Singapore and rujak in Indonesia, is a traditional salad made with fruits, vegetables and tofu.
You can use puffed tofu which can be bought fresh or frozen in most asian supermarkets.
Green mango is under ripe mango, it should be firm to the touch.

Ingredients
4 servings
150gJicama
Daikon or Fresh Waterchestnuts also work well, cut into small pieces
1cucumber
peeled and cut into bite size pieces
1Green Mango
peeled and cut into bite size pieces
120gTofu Puffs
Fried, cut into bite size pieces
3 tablespoonsroasted peanuts
2 tablespoonssesame seeds
2 tablespoontamarind paste
2limes juiced
2 tablespoonsoft brown sugar
2 teaspoonfish sauce
1chilli
small, finely chopped
Instructions
Step 1
Make the dressing by combining the tamarind paste, lime juice, soft brown sugar, fish sauce and chilli together. Stir until the sugar has dissolved.
Step 2
Place a frying pan over high heat and add the tofu puffs. Dry fry on all sides until they come nice and crispy. Once crisp remove from the pan and cut into bite size pieces.
Step 3
Chop the Jicama, Mango and cucumber into bite size pieces and place into a large mixing bowl.
Step 4
Add the chopped tofu, chopped peanuts and sesame seeds to same mixing bowl and stir to combine everything.
Step 5
Pour over the dressing and stir to ensure everything is evenly coated with the dressing.
Step 6
Serve immediately.
