Instructions
Step 1
Heat oil in large saucepan or Dutch oven over medium-high heat until hot. Add chicken, onion and garlic; cook and stir 4 to 5 minutes or until chicken is no longer pink in center.
Step 2
Add all remaining ingredients except peanut better; mix well. Bring to a boil. Reduce heat; cover and simmer 10 to 12 minutes or until vegetables are tender, stirring occasionally.
Step 3
Add peanut butter; cook over low heat, stirring constantly, until peanut butter is well blended and soup is thoroughly heated.
