1 tablespoonsvegetable oil
1yellow onion
small, finely diced
1 tablespoonminced garlic
1 ½ teaspoonsginger
grated
1 cupdried black eyed peas
rinsed
1plum tomato
cored and diced
1 teaspoonssalt
1 teaspoonpaprika
1 teaspoonground coriander
cayenne
½ teaspoonground tumeric
3 cupswater

Instructions
Step 1
Select saute in instant pot and heat oil. Add the onion, carlic, and ginger and saute until onions turn translucent. Add black eyed peas, tomato, salt, chile powder, coriander, cumin, and tumeric. Add water. Stir
Step 2
Make rice in rice cooker or use pot in pot method to cook rice in the pressure cooker.
Step 3
Cook on high pressure, manual mode, for 20 minutes.
Step 4
Natural release 10-15 minutes
Step 5
Remove rice if using pot in pot, stir, set instant pot to saute. Simmer until thickened, about 5 minutes, stirring during the cooking.
Step 6
Serve over rice and garnish with cilantro.
