Instructions
Step 1
Boil pasta until barely al dente In salted water. Reserve 1 C pasta water when draining.
Step 2
Combinine garlic, lemon zest, & lemon juice in sm. bowl.
Step 3
In med. skillet, add 1 Tbsp oil, broccoli, salt, & pepper; stir to brown (2 min.). Add 1/4C water and 3/4 tsp garlic, cooking until broccoli is tender (2 min.). Transfer to bowl & top with 3T Parmesan.
Step 4
In same skillet, heat 1T oil over med.-high. Cook shrimp (2-3 Min.) until cooked through. Transfer to plate.
Step 5
Heat 1T butter in same skillet over med.-high. Add remaining garlic, cooking until fragrant. Add veggie Better than Bouillon, lemon zest & juice, & 3/4 cup pasta water; boil. Add pasta & thicken sauce (2-3 min.). Add more pasta water as needed.
Step 6
Return shrimp to pan until warmed through.
Step 7
Serve pasta, shrimp, & broccoli with sauce. Garnish with parsley & Parmesan.
