Instructions
Step 1
Cook the linguine according to package instructions.
Step 2
Toss your shrimp in a bowl in salt, garlic powder, and pepper.
Step 3
Add the olive oil to a pan over medium heat and add the minced garlic. Add the shrimp and cook for 2 minutes on each side until pink. Remove the shrimp from the pan.
Step 4
In the pan, add the butter, shallot and sun dried tomatoes and cook for 1 minute. Pour in the cream and bring to a simmer stirring to combine.
Step 5
Place the shrimp back in the cream sauce, add the spinach and cooked linguine.
Step 6
Top with Parmesan and parsley if desired.
