Ingredients
4 servings
1 tablespoonolive oil
4boneless skinless chicken breasts
¼ teaspoonsalt
black pepper
3potatoes
peeled and cut into eight pieces
1onion
chopped
2green bell peppers
cored seeded, and sliced into 1/2" pieces
2 teaspoondried oregano
red pepper flakes
14.5 ouncesitalian style diced tomatoes
3 tablespoonslow sodium chicken stock
Instructions
Step 1
PREHEAT oven to 350 degrees
Step 2
HEAT oil in large skillet over medium heat
Step 3
SEASON chicken on both sides with salt and pepper. Saute on both sides until browned.
Step 4
TRANSFER chicken to large plate and cover. Add potatoes, onion, peppers, oregano, and pepper flakes to skillet. Saute for 10 to 15 minutes, until tender. Add tomatoes, tomato paste, and stock. Bring to a boil and remove from heat. Add chicken breasts to skillet and cover. Bake for 45 minutes.
