Instructions
Step 1
preheat oven to 375, preheat at least 10 minutes
Step 2
Drain beans. Halve lime and juice 1 half while cutting other into wedges.

drain chicken, separate, and pat dry
Step 4
Combine rice, beans, and cilantro lime pepper salt in 8 by 8 dish
Step 5
Combine chicken, taco seasoning, and enchilada sauce in a different 8 by 8 dish
Step 6
cover dishes with foil. Bake 15-20 minutes
Step 7
remove trays. Combine 1 tsp lime juice and sour cream in mixing bowl. add additional lime juice to taste.
Step 8
To serve, top rice and beans with chicken and sauce. garnish with cheese adn lime crema. Squeeze lime wedges over to taste.
