Step 1
Blend the shallots, garlic and ginger and water into a paste in a blender
Red paste
Step 2
Mix Malaysian curry powder and red chilli powder in a bowl, add water and make a red paste

Add oil to a pot. Add cinnamon sticks, cardamom and star anise and stir.
Step 4
Add chopped garlic, ginger, shallots and 1 stalk of curry leaves and cook for few minutes, stirring.
Step 5
Add the white paste, stir, then add red paste with a little water and give it a stir and let it cook for 2-3 mins.
Step 6
Add chicken, stir, then add potatoes and water. Mix it again and put the lid. Cook for 10 minutes
Step 7
Add coconut milk, sugar, tamarind water, and salt to taste. Stir and replace lid. Cook for another 20 mins until the chicken is cooked.
Step 8
Serve with rice or roti bread
