Spinach Artichoke Chicken Casserole

This creamy cheesy chicken spinach artichoke casserole is great alone for a low carb meal, with extra veggies or salad and garlic bread, over rice, pasta, gnocchi or baked potatoes.

Ingredients

2chicken breasts
boneless skinless, OR 2 cups or rotisserie chicken
0.5onion
diced
2 cupsspinach
14 ounceartichoke hearts
can
16 ouncesricotta cheese
2 cupsmozzarella cheese
¼ cupsour cream
¼ cupparmesan cheese
1 Tbspolive oil
salt
to taste
pepper
to taste
1 tspred pepper flakes
more or less to taste
1 Tbspfresh parsley
2 tspitalian seasoning
2cloves garlic
minced
Instructions
Step 1
Preheat oven to 350° and spray a 9x13 baking dish with oil.
Step 2
Add the olive oil to a pan over medium heat. Cut the chicken into bite sized pieces and add the chicken and onion to the pan. Season with salt and pepper to taste. Cook until the chicken is no longer pink. Add the chicken and onion to a large bowl.
Step 3
To the bowl add the ricotta cheese, 1 cup mozzarella cheese, parmesan cheese, sour cream, spinach, artichokes, and the remaining seasonings including more salt and pepper.
Step 4
Mix everything together and pour into the baking dish. Cover and bake 30 minutes.
Step 5
Sprinkle the remaining 1 cup mozzarella cheese over the casserole and put back in the oven to melt the cheese.
