Instructions
Step 1
preheat the oven to 300 degrees celcius
Step 2
Steam the pumpkin in the microwave or stove top until soft.
Step 3
Strain excess water and put into a pot together with the butter. Mash this together
Step 4
Place the curry mince into an oven proof dish and spoon over the mashed pumpkin
Step 5
Place in the oven and turn down to 180 degrees celcius. Bake for 25 minutes and check that pumpkin mash has slightly browned.
Step 6
Serve with salad of your choice
