Instructions
Step 1
Mix together the flour yeast and salt. Add the cold water and combine. It will be quite dry still. Put in a large bowl and cover with plastic wrap. Let it sit on the counter overnight for 12 to 18 hours. The next day, flour the surface and form the dough into a ball just kneading slightly. Place the ball on parchment paper and cover with a towel. Rise for 2 hours. Heat the oven to 425°. Place dough in a dutch oven pan with seam side up. Bake with the lid on for 40 minutes and then uncovered for 5 more minutes. Let cool completely before you cut.
