Instructions
Step 1
Put the broad beans into a pan of nearly boiling water and simmer for 5 minutes. Drain and remove any loose skins from the beans. Leave the beans to one side in in a bowl.
Step 2
Put the olive oil into the pan on a medium heat and tip in the spring onions. Fry the spring onions gently for 3 minutes then add the cumin, garlic and chilli (if using). Stir the contents of the pan together and leave for 1 minute to cook.
Step 3
Add the broad beans to the pan along with the chopped coriander and mint, stir together and serve, or leave to cool and serve as a cold dish.
