Step 1
Wash celery, carrot and leek. Cut in slices
Step 2
Heat oil in a pot to medium heat and sweat vegetables
Step 3
Add veggie stock and bring to the boil
Step 4
Add barley, simmer for 15mins

Add strained and washed chickpeas and simmer for 15 more minutes
