Instructions
For the broth
Step 1
Add sesame oil and mushrooms to pot. Cook for 5 minutes.

Add in onion, garlic and ginger. Cook for 3 more minutes.

Stir in miso paste, gochujang, soy sauce, and mirin.
Step 4
Add stock and bring to a boil.
Lower heat and simmer for 20 minutes.
Add in bok choy in the last couple minutes.
For the eggs
Step 5
Bring water to a boil.
Step 6
Add in your eggs and cook for 6,5 to 7 minutes

Immediately plunge the eggs into an ice bath to stop the cooking.

Gently peel off the shells and cut the eggs in half
For the pork belly
Step 9
Coat the pork belly in salt, pepper, paprika and a little bit of oil

Cook in a frying pan until golden and crispy
Assembling
Step 11
Boil noodles and rinse them in cold water.
Step 12
Add noodles to your bowls.
Ladle in the broth and top each serving with a boiled egg, sliced pork belly, and green onions
