Hutsuls inhabit areas between the southeast of those occupied by the Boykos and the northern part of the Romanian segment of the Carpathians. In his cookbook "Carpatian Cuisine," Sergii Pozhar writes: "A masterful combination of plant and animal products characterizes most Hutsul dishes." He notes that home cooks often compete with each aiming to surprise the neighbors with skill and originality. This dish is probably a result of that approach. The main ingredients are lean pork steaks, smoked sausage, and boiled eggs. The steaks are flattened and used as a wrap for the staffing made with chopped eggs and sausage. This dish is served with a variety of sides and with a sour cream sauce flavored with mushrooms. Note: These pork rolls taste better the next day after they are set in a refrigerator and all flavors develop. Slice the rolls before reheating them to serve for an appetizing presentation on the plate.

Instructions

for sauce

Step 1
Cover dry porcini with 1 cup (240 ml) cold water in a small jar and rehydrate for 2 hours at room temperature. Strain the mushrooms and finely chop them. Combine strained mushroom stock and the rest of the ingredients for the sauce. Reserve.

for meat rolls

Step 2
Place lean pork steaks between two sheets of plastic wrap and beat them flat and thin.
Step 3
In a small bowl, combine chopped eggs and sausage, and add mustard and seasoning to taste. Divide the stuffing into even portions, spoon them into the center of the pork, and fold the pork to secure the stuffing.
Step 4
Melt pork fat in a skillet over medium heat and fry the rolls on both sides.
Step 5
Transfer them into a saute pan, cover with the sour cream sauce, simmer, and slowly cook covered for about 15 min.
Step 6
Serve with a side dish and a generous portion of the sauce.
