Spiced Carrot Loaf

A vegetarian main course. Garam masala is a subtle blend of spices, it can be bought commercially or you can blend your own; most Indian cookery books will give a list of the spices used. It is not generally used on its own, but as a base for the addition of other spices. I like to use it on it's own in this dish.

Instructions

Step 1
Put vegetables and breadcrumbs into a large bowl and mix well. In a separate bowl beat eggs with a fork, then add milk, garam masala, salt and pepper. Stir together well, pour over vegetables and mix thoroughly.
Step 2
Melt butter in a small saucepan. Line a 2lb (1 kg) loaf tin with greaseproof paper and, using a pastry brush, paint the paper with some of the melted butter. Pour in the carrot mixture, pour over the remaining melted butter and bake for 1 hour at 190°C (375°F/Gas Mark 5). To serve, turn out onto a heated platter, gently remove greaseproof paper and sprinkle with toasted sunflower seeds. I like to serve a cabbe dish to accompany this, spinach is also good.
