Roasted Veg and Croutons

Instructions

Step 1
. Preheat the oven to 190 degrees C and remove 2 large baking trays.
Step 2
. Begin by ensuring ALL of your veg is clean then slice the courgette into around 1 cm thickness slices. Add to the baking trays.
Step 3
. Then remove the seeds from all of the peppers and begin to chop them into chunks around the size of a strawberry. Add to the baking trays.
Step 4
. Next, top, tail and peel the onions. Chop them into similar size chunks as the pepper. Add to baking trays.
Step 5
. Take the large tomatoes and make a cross on top of each one cutting around 2 cm deeps. Add to the baking trays standing up-right.
Step 6
. You do not have to peel or remove the middle of the mushrooms however if you prefer it that way then do that and I add them whole into the tray however you could break/cut them up into chunks the same size as the peppers and onions if suits you better. Add both kinds of olives to the trays at this point too.
Step 7
. Once all veg is added into the trays drizzle some olive oil over all of the veg and then sprinkle the salt, pepper, smoked paprika and jerk seasoning over too. Using a spatula ensure all veg is coated and then pop in the oven for 20 minuets.
Step 8
. Meanwhile, tear up the slices of brown bread into small crouton sized pieces. Set aside.
Step 9
. Then, drain the packet of halloumi and thinly slice it. Set aside.
Step 10
. Once the veg has been in the oven for 20 minuets remove the trays, using the spatula again move all the veg around and give it a bit of a mix. Then add the croutons and halloumi to the trays. Return to the oven for another 20 minuets.
Step 11
. After the other 20 minuets, remove the trays from the oven, turn off oven. Serve out evenly and enjoy.
