Instructions

Step 1
Make potatoes in to mash and leave to cool/dry
Step 2
Rub butter in to flour and add 200g potatoes with milk and knead in to a dough
Step 3
Leave dought to cool in fridge for 2 hours
Step 4
Preheat oven to 180C fan
Step 5
Finely chop celeriac and swede and blanch for 2 mins and then cool
Step 6
Combine celeriac, swede, onion, cheese, mushroom ketchup and sage
Step 7
Divide dough in to 4 pieces and roll outv to 12-13 cm diameter
Step 8
Fill each pastie and seal up with milk, brush with beaten egg
Step 9
Bake in oven for 45 mins and coll on cooling rack
