Instructions

Step 1
Preheat the oven to 400.
Step 2
Season the chicken with the salt and pepper, then rub all sides with the mustard. Set onto a plate.
Step 3
Heat a large oven-safe saute pan over medium heat, then add the butter and the oil. Next, add the chicken thighs, skin side down, and sear on both sides for about 4 minutes per side. Remove the chicken from the pan, place onto a plate and set aside.
Step 4
Add the onion to the pan and saute for about 4-5 minutes, until soft. Add the sage, thyme, oat milk and broth and bring to a boil. Next, add the sour cream and whisk, then add the chicken back to the pan, skin side up. Place the pan in the oven for about 25 minutes, until cooked through.
Step 5
Spoon the sauce over the chicken and garnish with scallions.
