Instructions

Step 1
Do Ahead: Soak skirt steak in water, massaging the meat.
Step 2
After a few minutes, drain; add fresh water.
Step 3
Soak for 10 minutes.
Step 4
Drain; add fresh water again and soak for 20 minutes.
Step 5
(If you prefer saltier meat, omit the last soaking.) Pat meat dry and pound thin to tenderize.

In a plastic bag or container, combine meat with olive oil, garlic, black pepper, and herbs.

Marinate in the refrigerator overnight.
Step 8
Prepare the chimichurri: Add garlic to a food processor and pulse to finely chop.

Add herbs, sugar, vinegar, olive oil and black pepper.
Step 10
Pulse 1-2 times to combine.

Chimichurri should still be chunky.

(This can also be done using a knife).

Add mango

MANGO CHIMICHURRI: 8-10 garlic cloves 1 CUP fresh parsley leaves (or a combination of mostly parsley with some cilantro and mint)

Preheat a grill or grill pan to medium-high heat.

Remove meat from marinade; discard marinade.

Add meat to grill; cook about 3 minutes per side.

Serve with chimichurri sauce.
