Italian Roasted Pork Spare Ribs
This is my best attempt at recreating the pork rib appetizer from Anthony’s Coal Fire Pizza that they no longer make. This is a much faster way to cook your ribs but the recipe does require pickled peppers and I highly recommend doing that yourself because it really will make a huge difference! Instructions
Step 1
1.) Preheat oven to 350 degrees. Set aside a roasting pan (glass works too it just needs to be big enough to lay the rack of ribs flat) sprayed with some nonstick spray.

2.) Fill a large stock pot with water (I filled about two inches higher then the rack of ribs was in height or about 7-8 inches of water).

3.) Add 2 cubes of chicken bouillon, 1 tsp of salt, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp of dried rosemary, 3 whole cloves of garlic and 1 tsp black pepper to the water.
Step 4
4.) Once water begins simmering/ at soft boil drop your ribs in. I rolled mine up and used a wooden skewer to secure them. Please feel free to remove the connective skin on the bone side of your ribs if it bothers you. Most butchers remove this before you purchase them in a store.

5.) Cook for 15-20 min. They should be slightly soft when you pierce them with a fork.

6.) Remove them from the water and allow to rest inside roasting pan you set aside from earlier before removing the skewer.
Step 7
7.) Lay the ribs as flat as you can in the pan and season with 2 tsp fresh minced garlic, 1 tbsp fresh chopped rosemary, 1 and 1/2 tsp salt , 1 and 1/2 tsp of black pepper and a drizzle of olive oil. Be sure to rub seasoning on both sides.

8.) Cover with foil and roast for 40 min.
Step 9
9.) Raise the temperature of the oven to 400 degrees and remove the foil. Continue cooking for 15-20 min or until the ribs start to brown.
Step 10
10.) Top ribs with 1 cup of pickled cherry or hot peppers, one cup of tender/ almost caramelized/cooked sweet onions, 1 cup of dry white wine (like a Chardonnay), 1/4 cup of the pickled pepper juice, and 1/4 cup of the reserve water that you used to boil your ribs in.

11.) Return the pan to oven and cook for 10-15 more minutes.
Step 12
Serve each rib with some peppers and onions and be sure to spoon some of that juice right on top!
