Crispy Gnocchi “Patatas Bravas”

Instructions

Step 1
Finely dice both onions. Heat 4 Tbsp oil in a skillet and sauté onions over medium heat 4-5 minutes.
Step 2
Add 4 of the minced garlic cloves to the onions once they are soft. Continue sautéing another couple of minutes. Add the tomatoes and half the paprika to the pan. Reduce heat to low and simmer 10-12 minutes until reduced by half.
Step 3
In a separate skillet, add the remaining oil over medium-high heat. When the oil shimmers, add the gnocchi and a sprinkle of salt. Fry about 10 minutes until golden. While the gnocchi and sauce cook, finish the rest of the dish.
Step 4
In a small bowl, combine the remaking garlic with mayonnaise, salt and pepper.
Step 5
Divide the gnocchi among 4 bowls, top with tomato sauce and mayo. Sprinkle with paprika as desired.
