Vegan Manapuas
I grew up on manapuas, a Hawaiian take on Cha siu bao. They are so so good fresh and store wonderfully as well. These steamed buns can be frozen and then microwaved and will still be delicious. Here I've taken my mom's manapua recipe and made it completely vegan. I've got to say, the vegan version slaps! That said, I've had mixed results with the dough. I haven't been able to achieve the same quality of bun with aquafaba as I have with egg whites.

Ingredients

Dough
3 ¼ cupsflour
Add more as needed
1 packageyeast
1 cupsoy milk
regular milk for original recipe
2 tablespoonssugar
½ teaspoonsalt
4 tablespoonsaquafaba
2 egg whites for original recipe
1 tablespoonvegan shortening
regular shortening for original recipe
Filling
Instructions
Step 1
Stir fry ginger, green onions, ground beef substitute, sugar, and soy sauce in 1 Tbs. oil. Cook for about 5 minutes.
Step 2
Mix hoisin sauce, water, and cornstarch. Add to stir fry.
Step 3
Add mushrooms and bamboo shoots. Cook until mushrooms are tender.
Step 4
Make dough. Allow dough to rise until double in size, about 1 hr.
Step 5
Divide dough into twelve smaller balls
Step 6
Form one ball into a 4" circle. Place a heaping tablespoon of filling in the center of the circle. Pull the perimeter of the circle up and around the filling and pinch together to seal the filling inside the bun. Place bun on 4" square of wax paper. Repeat for each dough ball.
Step 7
Steam for 15 minutes. Allow 5 minutes to cool.
