Instructions
Step 1
Soak sweet rice for 3 hours ahead of time, move out and drain. Place soaked sweet rice in a steamer, steam the rice for 25 minutes until the rice is almost transparent. Remove it from the steamer into a bowl and set it aside.
Step 2
Slice green onion, carrot and fresh shiitake mushroom into tiny pieces.
Step 3
Heat up olive oil, put ground pork in the pan once oil becomes hot, stir fry ground pork on medium heat until it becomes golden brown. Add minced carrot and mushroom in the pork to mix till excessive liquid dries out. Then simply put oyster sauce and dark soy sauce in the pork to stir fry for a minute. Finally, add steamed sweet rice in the pork, break up rice to evenly mix with pork and veggies. Remove from heat and set aside
Step 4
Place a spoon full of fried sweet rice filling in the center of siu mai wrapper, close it with your thumb and point finger gently to form a flower shape(you want to leave it open a bit to create a better dish presentation). Place siu mai in the hot steamer. Steam siu mai for 20 minutes and let it sit for 1 more minute before you take them out onto a plate. Drop a few pinches of green onion on top of siu mai, serve them warm.
