Refried Beans (Frijoles Puercos)

Honestly the best refried beans you will ever try. From the North of the country of Mexico, Sonora, I bring you this recipe that is life changing and is the only way I like and I grow up eating. So here I will share my mom's recipe.

Instructions

Step 1
In the InstaPot add the beans, once they are rinsed and sorted. Add 1/4 onion, 2 garlic cloves and water. Cook them for 25 min in pressure cook at high temperature. If you don't have InstaPot you can also do them in the stove. Place them in a container with water al least 2 hours before cooking or over night. If you don't, they will last 2 to 4 hours to cook. But if you do, they will be ready in 30 min.
Step 2
The guajillo chiles, stemmed and seeded, add them to a bowl with hot water to make them soft, leave them there for at least 10 min. Once they are soft, place them in the blender with 1/4 onion, 2 garlic cloves, salt, black pepper and Knorr. Blend until everything is super smooth, if you don't have a high power blender, use a strainer after blending.
Step 3
Once the beans are ready, with a hand blender mix the beans until you have the desire consistency.
Step 4
In a pot with medium high temperature, add the lard and once is melted add the beans and as much red sauce as you want. Depending on the desire color you will add more or less. Adjust the salt and sprinkle a handful of cheese, or until your heart is happy. Always mixing the pot so the beans don't burn.
Step 5
Bring them to a boil for at least 10 min, still stirring the pot. And enjoy them.
