Black Beans and Summer Squash with Sausage

Instructions

Step 1
Brown crumbled or sliced sausage in large skillet.
Step 2
Saute onions until soft. Add chopped bell pepper and squash. Saute a few more minutes. Add garlic.
Step 3
Add tomatoes, italian sausage and black beans (undrained). You can add a little water if you like more sauce.
Step 4
Simmer for about 15-20 minutes until squash is warmed through but not too soft.
Step 5
Serve on a bed of rice with a dollop of sour cream and Louisiana hot sauce. I like Crystal brand.
