1 tspSpice Paste
Coriander seeds
Cumin seeds
Fennel seeds
Black peppercorns
5Kashmiri Chillies
ginger paste
garlic paste
2 Tbsptamarind paste
2 TbspWater

Instructions
Spice paste
Step 1
Dry fry all Ingredients with a * for 2 to 3 minutes until fragrant.
Step 2
Add to spice grinder and grind for 3-5 seconds.
Step 3
Add remaining ingredients and mix in water until good paste texture.
Marinade

Into a large bowl add all ingredients and mix well.
Step 5
Leave for 2+ hours (longer the better).
Cooking
Step 6
Add ghee to Casserole dish on medium heat.
Step 7
Add the onion and fry until it starts to colour.
Step 8
Add Marinaded chicken and fry on medium heat for 5-7 minutes.
Step 9
Add sugar and bay leaves and cover with lid and cook on low heat for 20 minutes.
Step 10
Serve with rice and naan all separate.
