HF - Sweet Italian Sausage with Couscous & Spinach
Italian sausage has an established place on pastas and pizza pies, which is why we’re trying something different and adding it to bouncy couscous. The adventuresome combo, which is rounded out by supple mushrooms and tender spinach, is a textural treat and packs plenty of garlicky flavor, too.

Instructions
Step 1
Heat a drizzle of olive oil in med. pot over med.-high. Add sausage to the pot; sear until browned (1-2 min. per side.)
Step 2
Add mushrooms, onion, and half the garlic to pot and cook until softened (3-4 min.), tossing.
Step 3
Add oregano, 1½C water, & stock concentrate to pot. Bring to a simmer; stir in couscous. Let simmer uncovered (15 min.) until couscous is al dente. TIP: Add a splash of water if couscous absorbs all liquid before al dente.
Step 4
Heat a drizzle of olive oil in med. pan over med. Toss in remaining garlic; cook until fragrant (30 sec.) Add spinach; toss until wilted (3-4 min.) until wilted. Season with salt/pepper.
Step 5
Stir Parmesan into couscous to melt. Divide couscous between bowls and top with the spinach.
