Ingredients
2 servings
Rice
1 cupshort grain sushi rice

salt
Spicy Salad Mix

2 tablespoonsvegetable oil

¼ cupgreen onions
diced

¼ cuppanko breadcrumbs

3 tablespoonsmayonaise

2 tablespoonssriracha

1 tablespoonjalapenos
diced

1 teaspoonsoy sauce

Instructions
Step 1
Place the rice in a fine mesh strainer and rinse until the water that runs out the bottom is clear. This gets some of the starch out of the rice. In a medium saucepan, combine the rice and 2 cups of water.
Step 2
Cover and cook on low heat for 20 minutes. Remove from the heat and fluff with a fork and let cool.
Spicy Salad
Step 3
In a small bowl, combine the green onions, breadcrumbs, mayonnaise, sriracha, jalapeno and soy sauce. Stir to combine and set aside.
Salmon
Step 4
Season the salmon with salt and pepper and cook with olive oil in a large pan.
