Ingredients
5 servings
1 Tbspolive oil
½ cupyellow onion
diced
1 cupgreen bell pepper
diced
2green chili peppers
seeds removed, finely chopped
2 clovesgarlic
finely diced
1 tablespoonchili powder
1 tablespoonground cumin
1 tablespoondried oregano
1 teaspooncayenne pepper
15 ounceskidney beans can
drained
15 ouncespinto beans can
drained
28 ouncestomatoes
can use can, diced, with juice
2 cupslow sodium vegetable broth
8 ouncestomato sauce
6 ouncestomato paste
1 tablespoonsea salt
Instructions
Step 1
Heat the oil over medium high heat in a large soup pot.
Step 2
Add the onion and both kinds of peppers.
Step 3
Saute for 10 to 15 minutes until the onion is translucent.
Step 4
Add the the diced garlic and the spices. Cook a minute.
Step 5
Add both kinds of beans, broth, tomatoes, puree, paste and salt. Stir well.
Step 6
Bring to a boil then turn down to medium low and cook 30 minutes until the chili has thickened.
Step 7
Serve topped with chopped avocado and ground cashews.
