Ingredients

30mlOil
200gOnion
finely chopped
2Celery sticks
finely chopped
400gCarrots
finely chopped
300gRed peppers
sliced
2Garlic cloves
crushed
30mlTomato puree
400gCannellini beans
rinsed and drained
400gPinto beans
rinsed and drained, ek het hier ‘n blik swartbone gebruik
400gBorlotti beans
rinsed and drained
800gCanned tomatoes
chopped
1Vegetable stock cube
2bay leaves
15mlSugar
10mlRed wine vinegar
Instructions
Step 1
1. Heat the oil in a large pot and fry the onion, celery and carrots until soft and golden.
Step 2
2. Add the peppers and fry for another 5 minutes.
Step 3
3. Stir in the garlic and fry for 1 minute.
Step 4
4. Add the tomato puree, the beans and the canned chopped tomatoes.
Step 5
5. Swirl out the tomato cans with a bit of water and add to the pan with the stock cube, bay leaves, sugar and vinegar.
Step 6
6. Season and allow to simmer, uncovered for 25 minutes until the sauce reduces to coat the beans and the peppers are soft.
