Step 1
Melt butter in a large pot over medium heat. Add onion and leek. Cook, stirring, for 5 to 7 minutes or until softened. Add mushroom. Cook, stirring, for 5 to 7 minutes or until mushroom has softened.

Add garlic, seasonings and stock. Bring to the boil. Reduce heat to medium. Simmer for 10 minutes or until mushroom is soft and liquid has reduced slightly. Blend soup, with a stick mixer until smooth.
Step 3
Add cream. Blitz further if required and serve.
Step 4
Ladle into bowls. Top with cream and chives of you like. Serve.
Step 5
Note: for a thicker soup only use 500ml of chicken stock and 500ml vegetable stock to total 1Lt
