Thai Red Coconut Fish Curry

This recipe is one of my personal favorites. I have tried it using many times of fish, but this time I chose whiting which is the recipe I am sharing with you. This is a quick and easy yet delicious weeknight or Sunday dinner. I made this for Sunday dinner this week and my family enjoyed it. This recipe is packed with flavor and healing spiced and is overall so delicious and the bet part is, it only takes about 30 minutes to bring together.

Once your fish is skinned, cleaned, and thawed place on a baking dish lined with parchment paper and cover with oil and seasonings. Place in preheated oven of 400 degrees for 15-18 minutes.

Slice bell peppers and onions and set aside.
Step 3
In a large skillet heat 1 tbsp cooking oil and add minced garlic and sliced onions and cook until translucent and fragrant. Add Thai red curry and mix to combine. Add coconut milk (be sure to shake beforehand). Mix to combine. Add bell peppers and mix again and let cook for 2-3 min. Add seasonings and let cook for another 5 minutes minutes stirring occasionally. Add cooked fish (I baked mine) to the curry and let simmer on low covering the fish in the curry for 5-10 min.
