Instructions
Step 1
Cure the fish in brown sugar/salt (3:1) for 10 hours
Step 2
Wash off and cover in lemon juice
Step 3
Whizz up breadcrumbs and cheese (3:1)
Step 4
Seafood sauce on the fish and top with crumbs, then bake in 200oC fan oven for 15-20 mins
Step 5
Wilt your greens in a frying pan and boil your pasta. Combine with Philadelphia and some pasta water. Add lemon zest.
Step 6
Serve fish on top of pasta.
