Ingredients

18pasta shells
conchiglioni giganti
1 Tbspolive oil
300gground beef
0.5red onion
1 tspnutmeg
100ggrated gouda cheese
125gmozzarella
grated
salt
to taste
pepper
to taste
For the tomato sauce
Instructions
Step 1
Preheat oven to 200C (fan)
Step 2
Cook and drain pasta shells as directed on package.
Step 3
Heat olive oil in a pan, add onion and garlic,stir occasionally . Fry for 2 minutes and add paprika, stir to coat and fry for another minute. Add chopped tomatoes, salt, pepper, dry basil and brown sugar, mix together and cook for 10-15 minutes ( or until thickened) on a medium heat. Remove from the heat and purée with emulsion blender to give it smooth consistency. Set aside to cool.
Step 4
In a large skillet heat 1tbsp olive oil, add ground beef and onion, stir, and season with salt, pepper and nutmeg. Stir again and cook until ready. Set aside to cool.
Step 5
In a large bowl combine cooked beef and grated gouda cheese.
Step 6
Pour a bit of the tomato sauce in bottom of (around 7inch) glass baking dish.
Step 7
Spoon heaping tablespoon mixture into each shell. Arrange first layer of stuffed shells over sauce in baking dish. Cover with more sauce and garnish with half of grated mozzarella cheese.
Step 8
Arrange second layer of staffed shells, cover with remaining sauce and mozzarella.
Step 9
Cover with lid or aluminum foil and bake at 200C(fan) for 30 min covered and 10 min uncovered.
Step 10
Garnish with chopped basil and enjoy!
