Instructions

Step 1
Over medium heat, add tomatoes, onion, garlic, and broth. Cook for 20 minutes

Pour cooked tomato mixture into a blender (in batches if needed) or use an immersion blender. Blend until smooth and set aside.

In a separate larger pot over medium heat, add butter and flour. Stir and cook 4 minutes to make roux. Add tomato mixture to roux one ladle at a time, whisking between each addition until soup has been added.

Season with salt, sugar, and Italian seasoning. Stir until well combined. Serve immediately or store up to 5 days in a large sealed container in refrigerator.
