Beans are packed with goodness. The navy (haricot) beans in this dish supply about 20 g of protein, plus 80 per cent of your daily fibre needs, 70 per cent of your daily folate and 50 per cent of your daily manganese and copper requirements. Make this gluten-free by omitting the toast.

Step 1
First, toast the bread if using.

Meanwhile, heat the water or broth in a frying pan over medium heat.

Add the leek and sauté until soft.

Add the beans and mix with the leeks, smashing them a little with a wooden spoon.

Continue cooking until the mixture thickens.
Step 6
Add salt, garlic powder and chives.
Step 7
Then remove from the heat and spoon the bean mixture onto toast.
