Glow toast..
Stick it in a blender and glow recipes are one of my favourites and this glow toast is inspired by the classic romesco. Red peppers have more vitamin C than oranges, helping to keep our skin glowing and full of collagen. Paired with omega 3 rich walnuts with are full of skin nourishing fats and vitamins, smokey paprika and fibre high butterbeans this recipe not only tastes amazing but gets in all of the good stuff too. Spread onto toast, have as a snack or even enjoy as a sauce in meals.
You will need to serve 4
3 roasted red peppers from a jar
30g roasted walnuts
1/2 tsp garlic granules
2 tsp extra virgin olive oil
100g butterbeans
1 level tbsp tomato purée
1 tsp sweet smoked paprika
1 tbsp sherry vinegar (this is a sweeter vinegar so if replacing with red or white wine vinegar add 1 tsp sugar)
Good pinch salt
Roast the walnuts until they smell nutty, watch they dont burn or they will go bitter.
Drain the red peppers from the brine.
Place everything into a blender and pulse until the dip is broken down but still has texture. If the mix to too loose add more butterbeans, and also feel free to add more of any ingredient ie more salt, olive oil, garlic etc.
Spread onto toast with 6 minute eggs and dive in.
Feel free to swap the walnuts for almonds or hazelnuts or a mix. Butterbeans can be subbed for chickpeas.
