Instructions

Step 1
1️⃣Firstly, dice the onion and garlic

2️⃣Heat pan/pot with oil adding in the onion + garlic + curry powder + paprika + pinch salt. Stir and fry together for 2-3 minutes

3️⃣Boil the rice per packet instructions
Step 4
4️⃣Now add in the drained chickpeas, tinned tomatoes + 1/4 can of water (use the tin from the tomatoes) + harissa paste + yoghurt and stir
Step 5
5️⃣Allow to fast simmer on a medium heat for 5-7 minutes until it starts to thicken
Step 6
6️⃣Finally, take off the heat and stir through the spinach until it wilts
