Vegan Sesame Prawn Toast (Shrimp Toast)

A Chinese takeout classic, made plant-based. These crispy crunchy umami bites are a perfect starter or snacks for whentertaining. If you can't find vegan konjac prawns, simply use tofu for the entire mixture.

160gfirm tofu

100gvegan prawns
made from konjac
2cloves garlic
minced
1 tspfresh ginger
minced
2 Tbspvegan fish sauce
⅛ tspwhite pepper
1 stalkspring onion
minced
1 tspmushroom bouillon powder
1 tspsesame oil
water

Instructions
Step 1
Place all prawn paste ingredients into a small blender or small food processor and blend into a paste - add a few tablespoons of water if necessary. It doesn't have to be completely smooth - a little texture is fine.
Step 2
Cut the crusts off your slices of bread and then cut each bread slice into 4 triangles. Place all your sesame seeds into a medium bowl. Spread each triangle with some prawn paste so that it covers the entire triangle, carefully smooth the top and then press the prawn-paste side of the bread straight into the sesame seeds to coat entirely. Repeat until you have coated and seeded all your triangles.
Step 3
Heat a few inches of oil in a saucepan and fry the triangles in batches for a few minutes until golden brown - flipping so all sides cook evenly. Serve immediately - sprinkle with some coriander and sweet plum sauce or sweet chilli sauce on the side!
