Red lentil and vegetable curry - quick, easy, healthy and delicious!
I served mine with some Mango Chutney and a Naan.

Instructions
Step 1
Fry onion and garlic in olive oil
Step 2
Add vegetables and fry for a further few minutes
Step 3
Add medium curry powder and 100ml of water
Step 4
Add tinned tomatoes
Step 5
Add new potatoes and lentils
Step 6
Bring to the boil, cover and simmer until potatoes are cooked through
