Ingredients
4 servings
1 poundsground beef
¼ teaspoonsalt
or to taste
¼ teaspoonpepper
or to taste
3 teaspoonsolive oil
green pepper
or red, roughly chopped
1 candiced tomatoes with chopped peppers
mild, OR hot, drained
1 cuponion
roughly chopped
½ cupsour cream
¼ cupblue cheese crumbles
4pita breads
whole, warmed and softened in the microwave
4 sheetsaluminium foil

Instructions
Step 1
Cook the ground beef until there is no more pink. Add the olive oil, peppers and onions to the ground beef, and saute until the onions become translucent and the peppers are softeed.
Step 2
Add the RoTel tomatoes and peppers and combine and heat through. Check for salt and pepper and adjust to suit you.
Step 3
1/2 cup of sour cream mixed with 1/4 cup of blue cheese crumbles, optional
Step 4
Dampen a few paper towels with water and wrap the pita bread in them. Put them in the microwave, and warm them up till they become easily pliable.
Step 5
Put one pita bread on a sheet of aluminum foil and add a generous portion, about 1/4 of the ground beef, onions, peppers and tomatoes mixture to the warmed pita bread.
Step 6
Roll the aluminum foil and pita bread up gyro style and add the sour cream and blue cheese as a garnish if desired.
Step 7
Repeat this with the remaining 3 pita breads
