Instructions
Step 1
Add pasta to salted boiling water and cook according to the package instructions . You can use any pasta for this recipe . I chose rigatoni
Step 2
In a blender add the cooked beets with the beet juice garlic feta dill chilli ( seeds in or out is up to you) hot sauce ketchup salt pepper and olive oil and blend until smooth ( use vegan feta if you want to keep this dish vegan )

Step 3
When the pasta is cooked reserve a little bit of the cooking water . Strain the pasta then add into a large dish ( you will probably have enough sauce for two batches but depends how much sauce you want ! I usually keep the leftovers in a sealed jar in the fridge for a few days and use later ) add as much sauce on the pasta as you like then add a little pasta water and mix . Season with more feta and dill and enjoy
