Step 1
Preheat your oven and cast iron pan at 425 deg. (Put your cast iron pan in before you preheat your oven)
Step 2
Blend the eggs, flour, milk, vanilla, salt, brown sugar, and cinnamon in a blender till airy and bubbly. (This will help your rise, I blend 3x in my blendjet with the largest jar attachment)

Once the pan and oven are hot, melt the butter in your pan and pour in your batter.
Step 4
Cook for 20 min, top with whatever you like! We like powdered sugar and an extra sprinkle of cinnamon, butter or syrup.
