Apple Strudel reminds me of my childhood because I used to have it all the time during ski vacation in Italy. However, my own version of this classic is much lighter, refined-sugar-free and vegan!

Instructions

Step 1
Knead into a dough and chill in the fridge for 30 min. Meanwhile, prepare the filling.
Step 2
Chop up your apple. Then add the ingredients for the filling to a pot and let it simmer for 10-15 min until the apples are soft. Add some water if needed. You can also mash them a bit with a fork. Let it cool for at least 30 min to room temperature!
Step 3
Roll out your dough, spread the filling evenly on top and roll it up using a clean kitchen towel. Brush with almond milk (or coconut oil for a browned surface) and sprinkle cinnamon & sliced almonds on top.
Step 4
Bake at 180 degrees celsius for 40 min until the top is browned. Serve with vanilla sauce and enjoy!
