Step 1
Cook the pasta according to the pack instructions

Once the pasta io on,spray a large non-stick frying pan with low-calorie cooking spray and put it over a medium-high heat.Fry the chicken for 8-19 minutes or until cooked through,then transfer to a plate and set aside.
Step 3
Spray the pan again,throw in the peppers and cook for another 5 minutes. Stir through the garlic and ginger and cook for 1 minute.
Step 4
Drain the pasta and return to the pan,reserving 100ml cooking water in a jug. Add the peanut butter,soy sauce,lime juice,chilli and 3 tbsp cooking water to the pasta, stir in the chicken and heat it all through,adding more of the reserved pasta cooking water if you want a wetter sauce.season to taste,stir through the coriander and serve with salad.
